Foxtrot

Foxtrot is an upscale convience store with locations in Chicago & Texas. In its first iternation, it had over 30 locations, including 4 in Austin, Texas, 4 in Dallas, Texas, & 10 in the DMV area.

2018-2025

Eileen started at Foxtrot in 2018 as a cashier & worked every position available on the way up to a role on the Merchandising team, where she built the Visual Merchandising program from scratch. 

When Foxtrot started aggressively expanding in 2021, she hit the road, opening 20+ locations in 2022 & 2023. During her tenue she also developed the signage program, building out systems & fixturing for menu boards, promotional & wayfinding pieces.  

When Foxtrot re-opened in 2025, Eileen assisted in re-opening 10+ locations as well as opening the new entity’s single net new location. 

WNDR 

WNDR is an experiential museum with locations in Chicago, Boston & San Diego.

2024-2025

Eileen joined WNDR in 2024, leading an overhaul of the retail program with a focus on simplifying the assortment, creating premium apparel collaborations & elevating the visual presentation across locations.  

The Nook at 111 N Canal


The Nook at 111 is a cafe & market hospitality concept at the base of Sterling Bay’s 111 N Canal. 


Eileen led art direction for branding & signage, as well as sourcing & procurement for signage elements & merchandise.
